Dreaming of Rodolfo’s Pizza in Skillman, New Jersey
A standard European pizza. Good but not Rodolfo's.
Have you ever noticed that people tend to have some serious opinions about pizza? It seems like, depending on where you were raised, you have some kind of internal pizza preference set inside you. Thin or thick crust. Lots of sauce or next-to-none. Straight mozzarella or a mix of mozzarella, reggiano and provolone. And don’t even get me started on toppings or I might go on all day – in fact, I think I once listened to a semi-drunken debate between friends in college over whether pineapple should belong on top of a pizza. But I digress. My point is that I strongly believe that there is some kind of pizza bar that each person has inside them. And once set, it stays with you for the rest of your life.
Most people are surprised when I say this but Europe doesn’t really have good pizza. But that’s not exactly right. I try to explain it correctly but come out with a statement that fails. It’s not that Europe doesn’t have good pizza exactly but it’s definitely not the pizza I was raised on. Even in Napoli, the birthplace of pizza, I knew that my pizza margarita was excellent. And it was. I happily munched on it and even ordered it again later during my stay. But it still wasn’t that gooey, greasy, cheesy, yummy thin-crust pie of my youth. And today? When I ordered a small pizza at a local cafe, I found myself dreaming of Rodolfo’s Pizza in Skillman, New Jersey.
For me, Rodolfo’s will forever be the pizza that I compare all others against. I haven’t had it in years and I still sigh a little bit every time I bite into a pizza that is not theirs. The pull is still that strong.
So as I sit thousands of miles away from New Jersey and dream of a little slice of heaven, I’ll eat my European pizza but I’ll do so with a bit of a pout. But maybe, if you happen to be in the neighborhood, you can hit up Rodolfo’s for me and let me know if it’s still the pizza I dream of.
