Those few people who haven't heard of Chez Panisse will almost certainly recognize the name Alice Waters. She is the founder and owner of this hugely famous restaurant, which is consistently listed among the top 50 in the world. Since its opening in 1971, the restaurant has been dedicated to using fresh, local ingredients that are grown in a way that won't damage the environment. If the price of a complete Chez Panisse fixed menu is off-putting, would-be gourmands can also try the less expensive a-la-carte café upstairs.
