This appears to be the way for them to have a feeling of freedom of choice. more on TripAdvisor

They seem to have little patience to wait for someone to cook them proper food, so instead there is this tradition of putting pre-cooked meats, both hot and cold, onto a slab of baked yeast-dough. more on TripAdvisor
