I enjoyed an authentic version in Rome and when properly made, the dish should taste smoky, enhanced by saut�ed lardoons of pancetta, the sauce is made in the platter tossing fresh egg with the pasta, freshly grated parmagianno reggiano, and coarse pepper. more on CitySearch
